Classic Vanilla Frozen Parfait
A frozen parfait is a smooth, rich frozen dessert made by folding whipped cream into a cooked egg-yolk foam, then freezing it in a mold with no churning. This vanilla loaf slices cleanly and stays creamy straight from the freezer. Makes 8 slices in about 6 hr 35 min.

Baking tools for this recipe

Instructions

  1. Line a 9 by 5 inch (23 by 13 cm) loaf pan with plastic wrap, leaving an overhang.
  2. Whisk the yolks, sugar and water in a heatproof bowl set over a pan of barely simmering water, whisking constantly, until the mixture reaches 160 F (71 C) and is thick and pale, about 8 minutes.
  3. Remove from the heat and whip with a mixer 5 to 8 minutes until cool and tripled in volume; stir in the vanilla and salt.
  4. In a separate bowl, whip the cream to medium-soft peaks.
  5. Fold a third of the cream into the yolk foam to lighten it, then fold in the rest gently until no streaks remain.
  6. Scrape into the pan, smooth the top, fold the plastic over and freeze at least 6 hours or overnight.
  7. Turn out, peel off the plastic and cut with a warm knife. Let slices sit 5 minutes before serving.

Tips

  • Use a thermometer so the yolks reach 160 F (71 C) without scrambling.
  • Do not whip the cream stiff or the parfait turns grainy.
  • Serve with fruit sauce or chopped nuts.
  • Egg yolks are cooked to 160 F (71 C) before being folded into the cream.
