Instructions
- Combine the strawberries and 1/4 cup (50 g) of the granulated sugar in a bowl and set aside at room temperature for 15 minutes to macerate, then purée until smooth using a blender or food processor. Set aside.
- In a medium saucepan, combine the heavy cream, whole milk, remaining 1/2 cup (100 g) sugar, vanilla bean seeds and pod, and fine sea salt.
- Heat this mixture over medium heat, stirring occasionally, until it reaches about 175°F (79°C), just below boiling, then remove from heat.
- Cover and let the vanilla infuse for 30 minutes at room temperature, then remove the vanilla bean pod.
- Stir the fresh strawberry purée into the cream mixture until fully incorporated.
- Chill the mixture thoroughly in the refrigerator for at least 2 hours, or overnight for best flavor and texture.
- Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer's instructions, about 20-25 minutes, until it reaches soft-serve consistency.
- Transfer the churned ice cream into a freezer-safe container and freeze for at least 4 hours to firm up before serving.
