Instructions

  1. Heat the oven to 325 F (160 C). Butter a 9 x 5 inch (23 x 13 cm) loaf pan and line the bottom with parchment.
  2. Whisk both flours, baking powder, baking soda, spices and salt together.
  3. Warm the honey, brown sugar and milk in a small pan until the sugar dissolves. Cool 5 minutes.
  4. Whisk in the melted butter, egg and orange zest.
  5. Pour the honey mixture into the dry ingredients and stir until just smooth. Fold in the candied peel.
  6. Scrape into the pan and bake 50 to 55 minutes, until a skewer comes out clean and the top is deep brown.
  7. Cool 15 minutes in the pan, then turn out onto a rack and cool completely. Wrap and rest a day for best flavor and slice.

Tips

  • Wrap and rest the loaf a day; the flavor deepens.
  • Strongly flavored honey like chestnut or buckwheat gives a more traditional taste.
  • Cover loosely with foil if the top browns too fast.
  • Good with hot tea.
