Baking tools for this recipe

Instructions

  1. Pour the cold water into a small bowl and sprinkle the gelatin over it. Let it bloom for 5 minutes until it looks like soft applesauce.
  2. Heat 250 ml of the juice with the sugar in a saucepan until steaming and the sugar dissolves; do not boil.
  3. Remove from the heat, stir in the bloomed gelatin until completely dissolved, then add the remaining juice and lemon juice.
  4. Strain into a lightly oiled 3-cup (750 ml) mold to remove any foam and undissolved bits.
  5. Chill at least 5 hours, or overnight, until firm.
  6. To unmold, dip the mold in warm (not hot) water for 10 seconds, run a thin knife around the edge, and invert onto a plate.
  7. Serve chilled with lightly whipped cream if you like.

Tips

  • Never boil the gelatin mixture; heat weakens the setting power.
  • Fresh pineapple, kiwi, papaya and mango contain enzymes that stop gelatin from setting; use canned or cooked versions of those fruits.
  • Oil the mold lightly so the jelly slides out cleanly.
  • Good with whipped cream.
