Baking tools for this recipe

Instructions

  1. Heat oven to 325°F (163°C) and line two trays.
  2. Beat butter and first 70 g powdered sugar until smooth. Stir in flavorings and any permitted additions.
  3. Blend in flour, almonds and salt to create a soft dough. Scoop and roll into 30 small balls.
  4. Bake 15–19 minutes until bottoms are just golden; cookies should remain pale on top.
  5. Cool 5 minutes, toss warm cookies in half the 110 g coating sugar; cool fully then coat with the remaining sugar.
  6. Store in a tin only when cold so the coating stays powdery.

Tips

  • Measure flour by weight; extra flour makes dense, dry cookies.
  • Chilled dough and parchment promote even geometry and prevent sticking.
