Instructions
- Lightly oil a rimmed baking sheet and dust it with confectioners' sugar.
- In a heavy saucepan, stir the sugar, corn syrup, and water over medium heat until the sugar dissolves. Wash down the sides of the pan with a wet pastry brush.
- Clip on a candy thermometer and boil without stirring to 300°F (hard-crack stage), 15 to 25 minutes.
- Remove from the heat, let the bubbles subside, and carefully stir in the cinnamon oil (stand back; the fumes are strong).
- Pour onto the sheet. When firm but still warm, about 10 minutes, score into squares with an oiled knife.
- Cool completely, then break along the lines and toss with confectioners' sugar.
Tips
- Test your candy thermometer in boiling water first; it should read 212°F at sea level. If it's off, adjust the target temperature by the same amount. Above 1,000 feet, lower every target by about 2°F per 1,000 feet.
- Hot sugar causes serious burns; keep children and pets away from the stove while it cooks.
- Storage: Wrap individually and store airtight at room temperature for up to 1 month; humidity makes hard candy sticky.
