Instructions

  1. Whisk masa harina (cooked by simmering) into cool water to disperse dry solids; whisk in cocoa and cinnamon.
  2. Simmer gently while stirring, for 10–12 minutes until grain solids are fully cooked and the base is smooth.
  3. Add milk and sugar and simmer 3 more minutes while whisking to avoid scorching.
  4. For this original orange zest adaptation, add 3 g orange zest to the prepared base and stir or blend until evenly dispersed; if it is a spice or chopped solid, hydrate, infuse or melt it in the warm phase, then strain if necessary.
  5. Divide the warm chocolate-corn drink into two mugs and serve.

Tips

  • Grain or flour components must be cooked thoroughly; dry flour should never be consumed raw.
  • Contains a possible caffeine source; exact caffeine per serving varies with products and extraction.
  • Perishables must not sit at room temperature longer than 2 hours, or 1 hour above 90°F (32°C).
