Instructions

  1. Add 1/2 cup whole milk and 2 cups vanilla ice cream to a blender.
  2. Add 1 1/2 tbsp caramel sauce and 1/2 tsp pure vanilla extract.
  3. Blend on low for 10 seconds, then on medium-high for 20–30 seconds until thick and smooth. Avoid overblending.
  4. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  5. Pour into a chilled 16-ounce glass.
  6. Sprinkle 1 tsp turbinado sugar evenly over the top of the shake.
  7. Use a kitchen torch to caramelize the sugar until golden and crunchy, creating a brûlée topping.
  8. Top with 2 tbsp whipped cream and 1 tsp caramel drizzle.
