  • ¼ cup (60.0 ml)water
  • ¾ cup (180.0 ml)very hot water
  • 1.0 tbsp (14.0 g)unsalted butter
  • ¼ tsp (1.5 g)fine sea salt
  • 1.0 tsp (5.0 ml)pure vanilla extract

Instructions

  1. Combine the sugar and 1/4 cup water in a heavy saucepan and heat over medium, stirring only until the sugar dissolves.
  2. Boil without stirring, swirling the pan, until the caramel is dark mahogany and gives off the first faint wisps of smoke, 10 to 14 minutes (about 360°F (182°C)).
  3. Immediately remove from the heat and, standing back, carefully pour in the very hot water; it will sputter.
  4. Return to low heat and stir until any hardened caramel dissolves, 2 to 3 minutes.
  5. Remove from the heat and stir in the butter, salt and vanilla.
  6. Cool and refrigerate in a clean bottle.

Tips

  • The darker cook is the point: pull it at dark mahogany, but a black, acrid caramel is burnt.
  • Top a caramel brûlée latte with whipped cream and crushed caramelized sugar.
