Baking tools for this recipe

Instructions

  1. Make the syrup first: simmer the sugar, water and lemon juice without stirring 8 to 10 minutes until slightly thick. Cool completely.
  2. Heat the oven to 325 F (160 C). Cut the stack of phyllo into rectangles about 8 by 6 inches (20 by 15 cm). Keep covered under a damp towel.
  3. Brush a sheet with ghee, roll it loosely around a thin dowel or wooden spoon handle, then slide it off and gather it into a loose coil, forming a nest ring about 2 inches (5 cm) wide. Repeat with 2 sheets per nest.
  4. Place the nests tightly together in a rimmed pan so they hold their shape, and brush generously with ghee.
  5. Bake 25 to 30 minutes until deep golden.
  6. As soon as they come out of the oven, spoon the cool syrup over them and let them absorb for 1 hour.
  7. Fill the hollow center of each nest with ground pistachios and serve at room temperature.

Tips

  • Keep the syrup cool and the pastry hot so the nests stay crisp.
  • Do not oversoak, or they turn soggy.
  • Use plenty of ghee between layers for crisp flakiness.
  • Hot syrup and hot pastry can cause burns; combine them carefully.
