Instructions

  1. In a small saucepan, gently melt 1/4 cup brown sugar with 1 tbsp water over medium heat until it becomes a thick syrup; cool before using.
  2. Add 1/2 cup whole milk to a blender, followed by 2 cups vanilla ice cream.
  3. Add 1 1/2 tbsp of the cooled brown sugar caramel syrup and 1/2 tsp pure vanilla extract to the blender.
  4. Blend on low for 10 seconds, then on medium-high for 20–30 seconds, just until thick and smooth. Avoid overblending.
  5. Check consistency. Add 1 tablespoon milk at a time if too thick, or 1/4 cup additional ice cream if too thin.
  6. Pour into a chilled 16-ounce glass and top with 2 tbsp whipped cream and 1 tsp caramel drizzle.
  7. Serve immediately with a wide straw and long spoon.
