Instructions
- Prepare fully cooked tapioca pearls by boiling per product instructions; do not use undercooked dry tapioca pearls.
- Drain pearls and toss with brown sugar syrup while still warm; cool promptly if not immediately serving.
- Brew strong black tea, strain and chill before mixing with cold milk.
- For this original strawberry adaptation, add 50 g strawberry puree to the prepared base and stir or blend until evenly dispersed; if it is a spice or chopped solid, hydrate, infuse or melt it in the warm phase, then strain if necessary.
- Divide syrup-coated pearls and ice between two glasses, then add the tea-milk mixture; serve with wide straws.
Tips
- Serve with a spoon or wide straw; pre-cooked gel, noodles or pearls require temperature control and thoughtful choking-risk labeling.
- Perishables must not sit at room temperature longer than 2 hours, or 1 hour above 90°F (32°C).
