Instructions
- Chill a 1.5-quart (1.4 L) pudding bowl or dome mold in the freezer and line it with plastic wrap.
- Press the softened chocolate ice cream into the mold in an even 1-inch (2.5 cm) layer up the sides, leaving a hollow in the center. Freeze at least 1 hour until firm.
- For the parfait, whisk the yolks, sugar and water in a heatproof bowl over simmering water, beating until thick and pale and a thermometer reads 160 F (71 C), about 6 minutes. Beat off the heat until cool, then stir in the vanilla.
- Whip the cream to soft peaks and fold it into the yolk mixture along with the hazelnuts.
- Spoon the parfait into the hollow and level it. Cover and freeze at least 6 hours or overnight.
- To unmold, dip the mold briefly in warm water, invert onto a chilled plate and peel off the wrap. Slice with a hot knife and serve.
Tips
- Press the outer layer evenly or the center will leak through.
- Dip the mold in warm water for only a few seconds.
- Cook the parfait yolks to 160 F (71 C) and keep the bombe frozen.
- Good with coffee.
