  • ⅛ tspfine sea salt
  • ¾ cup (22.0 g)freeze-dried blueberries
  • 1.0 tbsplemon zest, finely grated

Instructions

  1. Line a rimmed baking sheet with parchment.
  2. Set aside a third of the chocolate. Melt the rest in a heatproof bowl over barely simmering water (or in 20-second microwave bursts), stirring, until it reaches 105°F.
  3. Remove from the heat and stir in the reserved chocolate until melted and the chocolate cools to 84 to 86°F. It's tempered when a streak on parchment sets glossy and firm within 5 minutes.
  4. Stir in the salt and lemon zest.
  5. Spread the chocolate about 1/4 inch thick on the parchment.
  6. Right away, scatter the freeze-dried blueberries over the top and press gently so they stick.
  7. Let set at cool room temperature until firm, about 1 hour, then break into pieces.

Tips

  • Short on time? Skip tempering, melt the chocolate gently, and keep the bark refrigerated; it will be softer and less glossy.
  • Storage: Store airtight in a cool, dry place for up to 2 weeks.
