Instructions

  1. Whisk the confectioners' sugar, freeze-dried blueberry powder, and salt in a bowl.
  2. Add the corn syrup, water, and vanilla and stir until smooth and glossy.
  3. Adjust with water, 1/2 teaspoon at a time: thick enough to hold a line for outlining, or thinned until a drizzled ribbon disappears in about 10 seconds for flooding.
  4. Decorate completely cooled cookies and let dry until firm, 6 to 8 hours or overnight, before stacking.

Tips

  • No freeze-dried fruit powder? Grind freeze-dried fruit to a fine powder in a blender, then sift out the seeds.
  • Corn syrup gives this icing a soft bite and a glossy finish; it dries firm but not rock hard.
  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Tahitian (floral, cherry, anise), or Madagascar (rich, creamy, classic). Any pure vanilla works.
  • Storage: Store leftover icing airtight at room temperature for up to 3 days; stir before using.
