Instructions
- Whisk together flour, sugar, instant yeast, and salt in the bowl of a stand mixer fitted with a dough hook.

- Repeat the rolling, folding, and chilling process two more times for a total of three turns, refrigerating the dough for 60 minutes after each turn.
- After the final rest, roll the dough out to a 20x10 inch rectangle about 1/4 inch thick.
- Cut the dough into 12 equal squares about 3x3 inches each.
- In a medium bowl, beat cream cheese with sugar and vanilla bean paste until smooth and fluffy.
- Place a spoonful of cream cheese filling in the center of each square, then sprinkle fresh blueberries on top.
- Fold two opposite corners of each square over the filling, creating an envelope shape but leaving some filling visible.
- Arrange the pastries on parchment-lined baking sheets. Cover loosely with plastic wrap and proof at 75°F (24°C) for 90 minutes or until puffed and nearly doubled.
- Preheat oven to 375°F (190°C). Beat the reserved egg and brush over the tops of the pastries.
