Baking tools for this recipe

Instructions

  1. Heat the oven to 350 F (175 C). Butter and flour a 9-inch (23 cm) ring or Bundt pan.
  2. Whisk the eggs, sugar, orange zest and vanilla until pale and thick, about 3 minutes.
  3. Whisk in the oil and Vin Santo.
  4. Sift the flour, baking powder and salt over the batter and fold gently until just combined. The batter should be soft and pourable; add the milk only if it seems stiff.
  5. Pour into the pan, scatter the pearl sugar on top and bake 38 to 42 minutes, until golden and a skewer comes out clean.
  6. Cool 10 minutes in the pan, then turn out onto a rack to cool.

Tips

  • Don't overmix once the flour goes in.
  • Pearl sugar stays crunchy; if you can't find it, use coarse sugar.
  • Serve with a small glass of Vin Santo.
  • Good with vin Santo or coffee.
