Instructions
- In a medium saucepan, combine heavy cream, whole milk, sugar, and fine sea salt. Split the vanilla bean lengthwise and scrape the seeds into the mixture, then add the bean pod as well.
- Heat the mixture over medium heat, stirring occasionally, until the sugar dissolves and the mixture is hot but not boiling, about 5 minutes. Remove from heat and let steep with the vanilla bean pod for 30 minutes.
- Remove the vanilla bean pod and discard. Stir in the mashed ripe bananas until well incorporated.
- Transfer the mixture to a bowl and chill in the refrigerator until completely cold, at least 2 hours, ideally overnight.
- Once chilled, pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches soft-serve consistency, about 20-25 minutes.
- Transfer the churned ice cream to a freezer-safe container and freeze for at least 4 hours until firm before serving.
- Scoop and serve with optional toppings like sliced bananas or caramel sauce if desired.
