Baking tools for this recipe

Instructions

  1. Rinse the wheat, chickpeas and white beans. Soak them together in plenty of cold water overnight, 8 to 12 hours. Drain.
  2. Put them in a large heavy pot with the 3000 ml water. Bring to a boil and boil hard for 10 minutes to destroy bean toxins, then reduce to a simmer.
  3. Simmer 1 hour, skimming foam. Add the rice and cook 45 minutes more, stirring often, until the grains and legumes are very tender.
  4. Add the raisins, apricots and figs and cook 15 minutes.
  5. Stir in the sugar and simmer 20 to 30 minutes, stirring, until the pudding is thick and porridge-like.
  6. Ladle into bowls and cool at room temperature, then chill 3 hours. Top with the walnuts, hazelnuts, cinnamon and toasted sesame.

Tips

  • Add sugar only once the grains are tender; sugar slows softening.
  • Aşure is traditionally cooked in a large batch and shared with neighbors.
  • Add pomegranate seeds on top for a classic finish.
  • Boil dried beans hard for at least 10 minutes before simmering to destroy natural toxins.
