Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, combine the almond cream with 1 tsp of pure vanilla extract and mix until smooth.
- Roll out the chilled puff pastry on a floured surface into a 12x12 inch (30x30 cm) square. Cut into 12 equal squares.
- Place about 1 tsp of the vanilla almond cream in the center of each square, then top with 1 tsp apricot preserves. Be careful not to overfill.
- Fold each square into a triangle or parcel, pressing the edges firmly to seal. Use a fork to crimp edges for a secure seal.
- Whisk the egg and water together to make an egg wash. Brush the tops of each pastry with the egg wash.
- Sprinkle the pastries evenly with coarse sugar.
- Chill the assembled pastries in the refrigerator for 10 minutes to help maintain their shape during baking.
- Bake the pastries in the preheated oven for 18-20 minutes, until puffed and golden brown.
- Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool slightly.
- Serve warm or at room temperature.
Tips
- Chill the pastries before baking to prevent shrinking and to help achieve a better puff.
- Vanilla enhances the almond cream flavor; stir it in well for balanced sweetness and aroma.
