Baking tools for this recipe

Instructions

  1. Mix flour, sugar and salt, cut in the butter until pea-sized pieces remain, add ice water gradually until it just holds together. Divide in two, wrap and chill 1 hour.
  2. Heat the oven to 425 F (220 C). Roll one disc into a 12-inch round and fit it into a 9-inch pie plate.
  3. Toss the apples with sugar, cornstarch, cinnamon and lemon juice. Pile into the shell and dot with butter.
  4. Roll out the second disc, cover the filling, trim, crimp and cut steam vents. Brush with egg wash.
  5. Bake on a baking sheet 20 minutes, reduce to 375 F (190 C), and bake 40 minutes more until golden and the juices bubble thickly.
  6. Cool at least 4 hours so the filling sets. Reheat slices briefly and top each with a scoop of ice cream.

Tips

  • Tart apples such as Granny Smith keep their shape.
  • Cooling lets the filling set.
  • Scoop the ice cream just before serving.
  • Refrigerate leftover pie; keep ice cream frozen.
