Baking tools for this recipe

Instructions

  1. Soak the beans in 750 ml water for 8 hours or overnight; drain.
  2. Cover with fresh water, bring to a boil, boil 5 minutes and drain to remove bitterness.
  3. Return the beans to the pot with 750 ml fresh water, bring to a boil and simmer partly covered 60 to 75 minutes, topping up as needed, until soft enough to crush easily with a finger.
  4. Drain off most of the water, leaving the beans just moist.
  5. Add the sugar in 3 portions, stirring and letting each melt before adding the next, then add the salt.
  6. Cook over low heat 15 to 20 minutes, stirring constantly, until a spatula leaves a trail and the paste thickens.
  7. Stir in the oil, remove from the heat and cool; it will firm as it cools.

Tips

  • Add the sugar only after the beans are fully tender or they will stay hard.
  • Stir continuously at the end so it does not scorch.
  • Mash some beans for a smoother, thicker paste.
  • Cook beans completely until soft; refrigerate or freeze the finished paste and do not leave it out more than 2 hours.
