Instructions
- Toast the breadcrumbs in a dry skillet over medium heat for 3 to 4 minutes, until lightly golden. Cool.
- Warm the honey in a wide saucepan over medium heat just until it loosens and starts to foam; do not let it darken.
- Off the heat stir in the breadcrumbs, almonds, orange zest, cinnamon and aniseed until the mixture is uniformly moist.
- Spread the hot mixture while it is still workable, about 1/2 inch (1.2 cm) thick, onto six of the wafer rounds, leaving a small border.
- Top each with a second wafer, press gently and let cool on a rack for 1 hour until firm enough to hold.
- Trim the edges if needed and serve in thin wedges.
Tips
- Work quickly while the honey mixture is warm; it stiffens as it cools.
- If it gets too stiff to spread, warm it in the pan for 20 seconds.
- Wafer sheets are sold as communion-style or ice-cream wafer papers.
- Honey is not safe for children under 1 year old.
