White cake

A tender butter cake made with egg whites instead of whole eggs, giving it a pale, snowy crumb and a clean vanilla flavor.

Leaving out the yolks keeps the crumb white and fine, which is why white cake is a classic choice for wedding and birthday cakes. Cake flour, milk and clear or pure vanilla extract are typical. Many recipes use the reverse creaming method, beating butter into the dry ingredients first, for an especially soft, even texture.

Without yolk fat, white cake can dry out if overbaked. Pull it from the oven as soon as a toothpick comes out clean and the top springs back.
