Springform pan

A round baking pan with a removable base and a side ring that opens with a latch, so delicate cakes can be released without turning them upside down.

Springform pans are the standard choice for cheesecakes, and they are also used for flourless chocolate cakes, tortes, mousse cakes and ice cream cakes. A 9-inch pan is the most common size. Running a thin knife around the edge before opening the latch keeps the sides of the cake from tearing.

The seam where the base meets the ring is not fully watertight. When baking in a water bath, wrap the outside in heavy foil or set the pan inside a slightly larger pan.
