Grams

The metric unit of weight used by most bakers and professional recipes, because weighing ingredients in grams is far more accurate than measuring by cups.

  • Measurement, dietary and professional terminology

A cup of flour can weigh anywhere from about 115 to 150 g depending on how it is scooped, which can change a recipe's results. Weighing on a kitchen scale removes that guesswork and also means fewer measuring cups to wash. One ounce equals about 28 g.

Grams make scaling simple, since amounts can be multiplied or divided without fractions. For water, 1 milliliter weighs 1 gram, so liquids can be weighed on the same scale as dry ingredients.
