Check the real temperature

Hang an oven thermometer on the middle rack, preheat to 350°F and read it after 20 minutes. If it reads 325°F or 375°F, adjust the dial to compensate. This one step fixes many sunken, pale or burnt bakes.

Habits for even results

  • Preheat at least 15–20 minutes; the light often goes off before the walls are hot
  • Use the middle rack unless a recipe says otherwise
  • Rotate pans halfway through to even out hot spots
  • With convection, lower the temperature about 25°F or check early

Troubleshooting

  • Domed, cracked tops usually mean the oven is too hot
  • Pale, dense bakes usually mean it is too cool
  • Dark bottoms: move the rack up or use a light-colored pan
