Baking tools for this recipe

Instructions

  1. Boil the edamame in salted water for 5 minutes until tender, drain and, if the beans have thin skins, slip them off.
  2. Mash the beans in a mortar or process with a little water to a coarse, slightly textured paste.
  3. Mix in the sugar and salt, adding water a teaspoon at a time until the paste is thick but spreadable. Taste and add sugar if wanted.
  4. Whisk the rice flour, sugar and water in a microwave-safe bowl until smooth.
  5. Cover and microwave 2 minutes, stir well with a wet spatula, then microwave 1 to 2 minutes more until translucent and sticky throughout.
  6. Stir or fold the hot mochi 1 minute until smooth and elastic.
  7. Dust a tray with starch, scrape out the mochi and cut or pinch into 12 pieces, handling with starch-dusted fingers.
  8. Roll each piece in the zunda paste until fully coated and serve the same day.

Tips

  • Keep your fingers well dusted with starch since hot mochi is very sticky.
  • Do not refrigerate mochi; it turns hard.
  • Use a mortar or pulse the food processor briefly so some texture remains.
  • Mochi can be a choking hazard for small children and older adults; cut small and eat slowly.
