Instructions

  1. Mix the flour, yeast, salt and sugar. Add the milk, egg and butter and knead 8 minutes until smooth and soft.
  2. Cover and let rise about 60 minutes until doubled.
  3. Mix the dark brown sugar and cinnamon in a wide dish. Divide the dough into 8 pieces and roll each into a rope about 20 inches (50 cm) long.
  4. Roll each rope thoroughly in the sugar mixture, pressing it on. Coil into a flat spiral with the end tucked under.
  5. Place the spirals well apart on two parchment-lined sheets and sprinkle with the light brown sugar.
  6. Rest 20 minutes while the oven heats to 375 F (190 C).
  7. Bake 22 to 25 minutes until deep brown; the sugar will bubble out and caramelize.
  8. Cool 10 minutes, then loosen any stuck sugar from the parchment while still warm. Serve warm with butter.

Tips

  • Press the coils flat so they bake evenly.
  • Use parchment; the sugar melts and sticks to bare pans.
  • Rewarm day-old buns for 8 minutes in a 300 F (150 C) oven.
  • Good with hot coffee and salted butter.
