Instructions
- Combine the heavy cream, whole milk, and the vanilla bean seeds and pod in a small saucepan.
- Heat over medium heat until the mixture just begins to steam and small bubbles form around the edges, about 5 minutes. Do not boil.
- Remove from heat, cover, and let the vanilla infuse for 5 minutes.
- Remove the vanilla pod and discard.
- Return the infused cream mixture to low heat and add the white chocolate, stirring continuously until completely melted and smooth.
- Add the unsalted butter and a pinch of fine sea salt, stirring until the butter is fully incorporated and the sauce is shiny.
- Remove from heat and let cool slightly before using.
- Use immediately or store in an airtight container in the refrigerator for up to 1 week. Reheat gently before serving.
Tips
- For a more intense vanilla flavor, add 1 teaspoon of vanilla bean paste along with the vanilla bean seeds.
- If the sauce thickens too much when cold, rewarm gently over low heat or in short bursts in the microwave, stirring frequently.
