Baking tools for this recipe
Instructions
- Simmer the lingonberries, water and 80 g sugar in a saucepan for 10 to 15 minutes, until the berries are very soft.
- Strain through a fine sieve into a clean saucepan, pressing most of the berry pulp through and discarding the skins.
- Bring the juice to a simmer. Slowly sprinkle in the semolina, whisking constantly.
- Simmer gently 5 to 6 minutes, stirring, until thickened. Stir in the vanilla.
- Pour into a large bowl and cool to lukewarm.
- Whip with an electric mixer on high speed for 8 to 10 minutes, until it turns from deep purple to pale pink and is light and fluffy.
- Chill for at least 1 hour and serve cold in bowls with cold milk and a sprinkle of sugar.
Tips
- Whip while still just warm; fully cold porridge will not expand as well.
- Use a large bowl because the porridge triples in volume.
- Cranberries or red currants can replace lingonberries; add a little extra sugar.
- Good with cold milk.
