Homemade vanilla sea salt hard candy
Old-fashioned vanilla sea salt hard candy, just like the ones from the candy shop. Best with Madagascar vanilla (rich, creamy, classic); any pure vanilla works. Makes about 1 pound (about 60 pieces).

Instructions

  1. Lightly oil a rimmed baking sheet.
  2. In a heavy saucepan, stir the sugar, corn syrup, and water over medium heat until the sugar dissolves. Wash down the sides of the pan with a wet pastry brush.
  3. Clip on a candy thermometer and boil without stirring to 300°F (hard-crack stage), 15 to 25 minutes.
  4. Remove from the heat, let the bubbles subside, and carefully stir in the vanilla (it steams).
  5. Pour onto the sheet, sprinkle with the flaky salt. When firm but still warm, about 10 minutes, score into squares with an oiled knife.
  6. Cool completely, then break along the lines.

Tips

  • Test your candy thermometer in boiling water first; it should read 212°F at sea level. If it's off, adjust the target temperature by the same amount. Above 1,000 feet, lower every target by about 2°F per 1,000 feet.
