Instructions

  1. Heat the oven to 350°F (175°C). Grease two 8-inch round cake pans, line the bottoms with parchment, and grease the parchment.
  2. Warm the measured milk with the culinary lavender just until steaming. Remove from the heat, cover, and steep for 10 minutes. Strain, cool to room temperature, and add a little fresh milk if needed to restore the strained milk to the original 240 ml. Do not add warm infused milk to the butter batter; it should be at room temperature before mixing.
  3. Beat the butter and sugar on medium-high speed for 3 to 4 minutes. The mixture should be pale, fluffy, and visibly increased in volume.
  4. Beat in the eggs one at a time, mixing well after each addition. Mix in the vanilla. If the batter begins to look curdled, add a spoonful of the measured flour.
  5. Whisk the ground ginger evenly into the dry ingredients so the ginger is dispersed before the wet and dry mixtures are combined. The accent should be evenly distributed with no visible pockets.
  6. Whisk the flour, baking powder, and salt together. Add the dry ingredients in three additions, alternating with the room-temperature lavender-infused milk in two additions, beginning and ending with the flour. Mix on low and stop as soon as the batter is smooth.
  7. Divide the batter evenly between the pans and smooth the tops. Bake for 28 to 32 minutes. The cakes are done when the tops spring back lightly and a tester inserted near the center comes out clean or with a few moist crumbs.
  8. Cool the cakes in the pans for 10 minutes, then turn them onto a rack and let them cool completely before filling or frosting.
