Baking tools for this recipe
Instructions
- Whisk the sugar and milk powder together in a medium saucepan, then whisk in the milk, half-and-half, corn syrup and salt.
- Warm over medium heat, stirring often, until the sugar and milk powder dissolve and the milk is steaming but not simmering, about 5 minutes (about 150 F / 65 C).
- Remove from the heat and stir in the vanilla.
- Pour into a bowl set over ice water and stir for a few minutes, then cover and refrigerate until fully cold, at least 4 hours or overnight.
- Churn in an ice cream maker according to the manufacturer's directions until it looks like thick soft-serve, 20 to 25 minutes.
- Transfer to a chilled container, press parchment on the surface and freeze until scoopable, at least 4 hours.
- Let it sit on the counter for 5 minutes before scooping.
Tips
- Make sure the base is very cold before churning; a warm base turns icy.
- Low fat means more ice crystals, so eat it within a few days for the best texture.
- The milk powder and corn syrup are what keep it smooth, so do not skip them.
- Good with fresh fruit.
