Baking tools for this recipe

Instructions

  1. Heat the milk, cream, half the sugar, the vanilla bean and its seeds, and the salt in a saucepan until steaming. Cover and steep for 15 minutes.
  2. Whisk the yolks with the remaining sugar until pale.
  3. Whisk about half a cup of the warm milk into the yolks to temper them, then pour the mixture back into the pan.
  4. Cook over medium-low heat, stirring constantly with a spatula, to 175 F (79 C), when it coats the back of the spoon and a finger drawn through stays clear, 5 to 8 minutes; it must reach at least 160 F (71 C).
  5. Strain into a bowl set in ice water and stir until cool, then remove the bean.
  6. Cover and chill at least 6 hours or overnight.
  7. Churn in an ice cream maker for 20 to 25 minutes until thick and creamy.
  8. Serve soft, or freeze 2 hours for scoopable.

Tips

  • Chill the base thoroughly; a cold base churns denser with less air.
  • Do not overheat past 180 F (82 C) or the yolks curdle; strain if they do.
  • Serve within 2 days at full smoothness.
  • Cook the custard base to at least 160 F (71 C) to cook the yolks, then chill quickly and keep refrigerated before churning.
