Instructions
- Whisk the cold pastry cream until smooth and flexible. Set it aside while you whip the cream. The pastry cream should be smooth enough to fold without leaving dense lumps.
- Whip the cold heavy cream with the confectioners' sugar to medium peaks. When you lift the whisk, the peak should hold its shape but bend slightly at the tip.
- Fold one-third of the whipped cream into the pastry cream to lighten it, then gently fold in the rest in two additions. Stop when the mixture is uniform and airy; overmixing will deflate it.
- Cover and refrigerate for 30 minutes before piping into doughnuts or pastries. Keep the filling cold until use and refrigerate filled pastries.
Tips
- No vanilla bean? Use 2 teaspoons pure vanilla extract, 1 tablespoon vanilla bean paste or 1 teaspoon vanilla powder instead. Add it where the recipe adds the seeds; if the bean is steeped in hot milk or cream, stir the swap in after cooking, off the heat.
