Instructions

  1. Whisk the ground ginger evenly into the dry ingredients so the ginger is dispersed before the wet and dry mixtures are combined. The accent should be evenly distributed with no visible pockets.
  2. Whisk the ground cardamom, flour, sugar, salt, yeast, and nutmeg together in the bowl of a stand mixer.
  3. Add the egg, milk, melted butter, and vanilla. Mix with the dough hook on low until no dry flour remains, then knead on medium-low for 6 to 8 minutes. The dough should become smooth, elastic, and slightly tacky but should pull away from the sides of the bowl.

  5. Roll the dough about 1/2 inch thick on a lightly floured surface. Cut rings with a 2 1/2-inch round cutter and a 1-inch center cutter, then place them on parchment squares.
