Baking tools for this recipe

Instructions

  1. Whisk the flour, baking powder, spice and salt in a bowl.
  2. Rub in the cold butter with your fingertips until the mixture looks like fine breadcrumbs.
  3. Stir in the sugar and currants and make a well in the center.
  4. Add the beaten egg and mix with a round-bladed knife until the dough comes together, adding a splash of milk only if it is dry.
  5. Roll out on a floured surface to about 1/4 inch (6 mm) thick and cut 2-inch (5 cm) rounds. Re-roll the scraps once.
  6. Heat a heavy griddle or cast-iron pan over low-medium heat and grease lightly. A few drops of water should sizzle and skip.
  7. Cook the cakes 3 to 4 minutes per side, until deep golden and cooked through; lower the heat if they brown too fast.
  8. Dust with sugar while still warm and serve.

Tips

  • A low, steady heat cooks the cakes through; too hot and the outside burns.
  • Keep the dough only 1/4 inch thick so they cook evenly.
  • Serve warm with butter or plain with tea.
  • Good with hot tea.
