Baking tools for this recipe
Instructions
- Mix the flour, yeast, salt and sugar. Add the milk and butter and knead 8 minutes to a smooth, slightly soft dough.
- Cover and let rise 60 minutes in a warm place until doubled.
- Heat the oven to 450 F (230 C) with a baking sheet or pizza stone inside.
- Roll or press the dough into a 28 cm (11 inch) round, about 6 mm (1/4 inch) thick, on parchment. Make the edge slightly thicker. Rest 15 minutes.
- Whisk the crème fraîche, cream, yolk, sugar and salt until smooth.
- Spread the topping over the dough, leaving a 2 cm (3/4 inch) rim.
- Slide onto the hot sheet and bake 15 to 20 minutes until the edge is golden and the topping is set with brown spots; it should reach 160 F (71 C).
- Cool for 5 minutes and cut into squares. Serve warm.
Tips
- A very hot oven gives the best browned spots; the topping is thin and sets fast.
- Use full-fat crème fraîche, which does not split in the heat.
- Dust with cinnamon for a sweeter touch.
- Bake until the egg-and-cream topping is set and reaches 160 F (71 C).
