Baking tools for this recipe

Instructions

  1. Rinse a 15 cm (6 inch) square container with water. Whisk the agar into 500 ml cold water in a saucepan until no lumps remain.
  2. Bring to a gentle boil over medium heat, then boil for 2 minutes, stirring constantly, to dissolve the agar completely.
  3. Pour into the container, pop surface bubbles, and cool at room temperature for 1 hour.
  4. Cover and refrigerate for at least 3 hours until firm.
  5. Syrup: simmer the brown sugar and 100 ml water for 5 minutes until slightly thickened. Cool and chill.
  6. Turn out the jelly and cut into long strands about 3 mm thick with a sharp knife, or press through a noodle press.
  7. Divide the noodles among chilled bowls, spoon the syrup over and dust with kinako.

Tips

  • Boil the agar for the full 2 minutes or the jelly will be soft and cloudy.
  • Cut the noodles into long square strands for the classic look.
  • Use cold bowls to keep it refreshing.
