Baking tools for this recipe

Instructions

  1. Mix the flour, brown sugar and salt in a bowl. Add the warm water gradually, stirring, until you have a thick, stiff but smooth dough.
  2. Knead in the roasted soybeans.
  3. Lightly oil a sheet of parchment (about 40 cm long) and shape the dough into a log roughly 25 cm (10 inches) long and 5 cm (2 inches) thick.
  4. Roll the log in the parchment, twist the ends, then wrap in a clean damp cloth or foil and tie.
  5. Steam over boiling water for 40 to 45 minutes, topping up with water as needed, until the dough is firm and the surface is glossy.
  6. Unwrap and cool completely, about 1 hour; the log firms as it cools.
  7. Slice into pieces about 1 cm (3/8 inch) thick with a sharp, oiled knife. Serve as is or toast briefly in a dry pan.

Tips

  • Keep the dough stiff; a sloppy dough makes a flat, gummy log.
  • Oil the knife between slices to prevent sticking.
  • Sometimes peanuts replace soybeans; roast them first.
  • Good with green tea.
