Instructions

  1. Line a baking sheet with parchment. Toast the nuts in a dry skillet over medium heat, stirring, until fragrant, 3 to 4 minutes; transfer to a plate.
  2. In the same skillet, cook the sugar and water over medium heat, swirling the pan (don't stir), until the sugar melts and turns light amber, 4 to 6 minutes.
  3. Remove from the heat, stir in the nuts, vanilla, and salt, and quickly spread on the parchment.
  4. Cool completely, about 20 minutes, then chop or pulse into coarse crumbs. Press onto freshly glazed doughnuts.

Tips

  • Hot sugar causes serious burns; keep children away and don't touch the caramel.
  • Vanilla swap: use vanilla bean paste 1:1 in place of the extract for visible specks, or the seeds of 1 vanilla bean for each tablespoon of extract.
  • Best vanilla for this: Tahitian (floral, cherry, anise), or Madagascar (rich, creamy, classic). Any pure vanilla works.
  • Storage: Store airtight for up to 1 week.
