Instructions
- Mix the flour, yeast, sugar and salt. Add the water, melted butter and oil and knead 8 minutes until soft and smooth.
- Cover and let rise in a warm place for 60 minutes until doubled.
- Mix the tahini, sugar, powdered sugar and cinnamon into a thick, smooth paste.
- Divide the dough in half. Roll each half into a thin rectangle about 30 x 40 cm (12 x 16 inches).
- Spread the tahini mixture evenly over each rectangle to within 1 cm of the edges, then roll up tightly from the long side.
- Cut each roll lengthwise in half, leaving it joined at one end. Twist the two strands around each other with the cut sides up, then coil into a loose spiral or form a ring.
- Place on a parchment-lined baking sheet, cover and rest 30 minutes. Heat the oven to 350 F (180 C).
- Brush with the yolk and milk, scatter with the walnuts, and bake for 25 to 30 minutes until deep golden. Cool 15 minutes before cutting.
Tips
- Stir the tahini well first; separated oil makes the filling greasy.
- Roll the dough very thin so the filling shows in many layers.
- Cover loosely with foil if the walnuts darken too fast.
- Good with turkish tea.
