Instructions

  1. In a large bowl, beat the creamy peanut butter with half of the confectioners' sugar until completely smooth, about 1 minute.
  2. In a chilled bowl, whip the cold cream, remaining confectioners' sugar, salt, and vanilla on medium-high speed to stiff peaks, 2 to 3 minutes.
  3. Fold about a third of the whipped cream into the creamy peanut butter mixture to loosen it, then fold in the rest until smooth.
  4. Refrigerate for 30 minutes to firm up. Spoon the filling into a piping bag fitted with a long filling tip. Poke a small hole in the side of each cooled doughnut and pipe in about 2 tablespoons, until the doughnut feels heavy.
