Baking tools for this recipe

Instructions

  1. Heat the oven to 350 F (180 C). Butter and line an 8-inch (20 cm) square baking pan.
  2. Pour the boiling water over the dates in a bowl, stir in the baking soda (it will foam) and let stand 15 minutes.
  3. Beat the butter and brown sugar 2 to 3 minutes until fluffy. Beat in the eggs one at a time, then the vanilla.
  4. Whisk the flour, baking powder and salt. Fold into the butter mixture alternately with the date mixture, including the soaking liquid, to make a loose batter.
  5. Pour into the pan and bake 30 to 35 minutes, until risen, dark and a skewer comes out clean.
  6. While it bakes, melt the sauce butter and sugar together in a saucepan over medium heat. Add the cream and salt, bring to a gentle boil and simmer 3 to 4 minutes, stirring, until glossy and slightly thickened. Stir in the vanilla.
  7. Poke the warm cake all over with a skewer, spread a third of the sauce over the top and let it soak in for 5 minutes. Cut into squares and serve with extra warm sauce.

Tips

  • The batter is runny; that is correct and gives the sponge its moist texture.
  • Chop the dates small so they melt into the sponge.
  • Reheat the sauce gently; it thickens as it cools.
  • Bake until a skewer comes out clean because the batter contains raw egg; refrigerate leftovers within 2 hours.
