Baking tools for this recipe

Instructions

  1. Beat the butter and brown sugar 2 to 3 minutes until smooth and creamy. Beat in the water.
  2. Whisk the flour, baking soda, cinnamon, cloves and salt. Add to the butter mixture and mix on low until a thick, evenly colored dough forms.
  3. Divide the dough in two, flatten into discs, wrap and chill at least 1 hour, or overnight, until firm.
  4. Heat the oven to 350 F (180 C). Line two baking sheets with parchment.
  5. Roll one disc on a lightly floured surface to 3 mm (1/8 inch). Cut into rectangles or shapes with a knife or cutter and place 1 inch (2.5 cm) apart on the sheets. Re-roll scraps once.
  6. Bake 10 to 12 minutes until the edges are deep golden. They crisp as they cool.
  7. Cool on the sheet 5 minutes, then move to a rack.

Tips

  • Roll thin and even for a snap rather than a chewy cookie.
  • For the deepest flavor, use dark brown sugar or Belgian cassonade.
  • Flour a mold well if you press the dough into one, and chill the dough first.
  • Do not taste the raw dough; it contains uncooked flour.
