Baking tools for this recipe

Instructions

  1. Purée the strawberries with the granulated sugar, then chill the sauce for 30 minutes.
  2. Whip the cream with the powdered sugar to soft peaks.
  3. Spread the whipped cream in a shallow layer on two chilled plates.
  4. Soften the ice cream just until it presses easily and fill a cold spaetzle press or potato ricer.
  5. Press the ice cream onto the cream so it forms spaghetti-like strands.
  6. Add the strawberry sauce over the center like tomato sauce and cover with grated white chocolate.
  7. Serve immediately.

Tips

  • Chill the press and plates; warm tools make a puddle.
  • Press quickly in one motion.
  • A dollop of cream under the ice cream keeps the nest from sliding.
  • Good with coffee.
