Instructions

  1. Make the syrup: boil the sugar and water 10 minutes, add the butter, and let cool until just warm.
  2. Whisk the milk, water and egg, then whisk in the flour and salt until smooth. Rest the batter 15 minutes.
  3. Heat a lightly greased nonstick pan over medium heat and cook thin crepes, about 1/4 cup (60 ml) of batter each, 1 minute per side without browning.
  4. Stack the crepes as they cook and let them cool.
  5. Sprinkle each crepe with about 1 tablespoon of walnuts and roll into a tight cylinder.
  6. Arrange the rolls seam-down in a deep dish and cut each into 2 or 3 pieces.
  7. Pour the lukewarm syrup over the rolls, let soak 10 to 20 minutes, and serve with extra walnuts.

Tips

  • Make sure the syrup is only lukewarm or the crepes turn gummy.
  • Cook crepes over medium heat so they stay pale and tender.
  • Add a little milk to the batter if it thickens as it rests.
  • Good with hot tea.
