Baking tools for this recipe
Instructions
- Heat the milk over low heat until small bubbles form at the edge. Pour it into a wide, heatproof bowl and let it sit about 10 minutes until a thick skin forms.
- Lift one edge of the skin with a skewer and pour most of the milk through the gap into a pitcher, leaving the skin in the bowl with a spoonful of milk beneath it.
- Stir the sugar into the egg whites, then stir in the strained milk. Strain through a fine sieve to remove bubbles.
- Pour the mixture back under the skin through the gap.
- Cover the bowl with plastic wrap, poked once. Steam over boiling water on medium-high for 10 minutes, then turn off the heat and rest, covered, 5 minutes. The center should be just set and read 160 F (71 C).
- Serve warm, or chill 2 hours and serve cold.
Tips
- Do not let the milk boil or it will lose the skin.
- Straining twice gives a smoother pudding.
- Use a bowl with straight sides so the skin sits flat.
- Steam until the egg white pudding is set and reaches 160 F (71 C); refrigerate leftovers.
