Instructions

  1. Put the egg whites, sugar, water, cream of tartar, and salt in a large heatproof bowl set over a pan of simmering water.
  2. Beat with a hand mixer on high speed until the frosting holds stiff, glossy peaks and reaches 160°F, about 7 minutes.
  3. Remove from the heat, add the vanilla, and beat 1 minute more.
  4. Use right away; it sets a light crust as it stands.
